Product Description

Weipa is a Chinese-style seasoning paste made by Kouki Shoko, a seasoning maker rooted in Kobe's Chinatown (Nankinmachi), where the company was founded in 1953. According to historical accounts, Weipa began as a formula for professional chefs, launched as a consumer product in 1981, and spread from the Kansai region across Japan by word of mouth.

The name "Weipa" (味覇) combines the characters for "taste" (味) and "hegemon" or "king" (覇), commonly rendered as "king of taste" rather than a literal translation.

This is Kouki Shoko's standard Weipa: a semi-paste ("han-neri") seasoning with a scoopable, non-liquid, non-powder consistency, packed in a can. It's distinct from the brand's Premium Weipa (higher meat and vegetable extract concentration) and Vegan Weipa (launched 2022, no animal ingredients or added MSG).

Weipa is used as a soup stock base and an all-purpose seasoning for stir-fried dishes such as fried rice (chahan), adding savory depth built from meat extracts, vegetable ingredients, and spices.

How to Use

For soup: Dissolve 10g of Weipa into 600cc of boiling water along with your ingredients of choice. Add salt to taste if desired.

For stir-frying: Add Weipa directly to ingredients while frying, adjusting the amount to taste. Alternatively, dissolve it in water first for easier mixing.

Kouki Shoko recommends scooping with a sturdy metal spoon or fork rather than a wooden or bamboo utensil, as the firm paste can damage more delicate utensils.

Storage

Keep away from direct sunlight and high humidity. Refrigerate after opening. Unopened, shelf life is approximately 18 months from the date of manufacture, per Kouki Shoko's labeling.
